Starter Course Selection

A.
Hors d ' oeuvre selection:- Make a choice of four dishes for your plated starter so that your guests can savour a variety of flavours.
i.
Scottish smoked salmon and cracked black pepper.
ii.

Italian antipasti selection.

iii.

Succulent king prawns with delicate salad leaves finished with virgin olive oil and balsamic vinegar.

iv.

Slices of ripe melon scattered with crushed green peppercorns.

v.

Chicken liver pâté with cognac, herbs and melba toast.

vi.

Baby spinach, plum tomatoes, spring onions, and mozzarella dressed with virgin olive oil and balsamic vinegar infused with basil.

vii.

Couscous with fresh roasted vegetables and toasted pine nuts.

Duck liver pâté with apricots and cognac with melba toast.

Three melons, kiwi and pineapple melody.

Red pepper, sweet corn and cucumber salsa.

Roasted Cajun salmon and prawns on shredded endive with a citrus dressing.

Scottish smoked salmon, king prawns, quails eggs and asparagus spears with a sesame seed dressing.

Slices of tender melon, pineapple and kiwi drizzled with a red berry coulis.

Caramelised red onion and goats cheese filo tart set on a bed of salad leaves finished with shavings of parmesan cheese, olive oil and balsamic vinegar.

Seafood and asparagus terrine with fine tender lettuce leaves served with a dill and lime sauce, brown bread and butter.
